My knife skills are improving! Part of my commitment to consistently improving my health means becoming a better cook. This way I am able to prepare delicious and healthy meals that I know won’t bother my system because I know what is in them! I never really liked to cook growing up even though I was surrounded by fabulous cooks in my family. I did like to bake though…I even once shocked my family when I decided at a very young age to make a chocolate soufflé. I mean, what…it’s hard? I had no idea. I just followed the recipe and it turned out beautifully. I still love to bake and have been enjoying baking things that are gluten free, low glycemic and fairly healthy, but I am much more grateful for my improved general cooking skills. I have made friends with my crock pot and have a growing arsenal of delicious and simple go to recipes. Taking control of this aspect of self care has decreased my stress level and reminded me that making time for myself in this way is essential. I am becoming the anti-takeout New Yorker! But let’s get real, I still order takeout sometimes. Everything in moderation.
